The antioxidants (oxidation preventives, oxidation inhibitors) slow down the process of oxidation of the alimentary products. Thus they prevent the racidification of fats and fat-containing products; they save fruit, vegetables and their processing products from darkening, and slow down oxidative fermentation in beverages (wine, beer, and soft drinks). As a result of action of the antioxidants, shelf-life of products increases in several times. The antioxidants can prevent cancer and cardiovascular diseases, they are able to revitalize the body and remove toxins.
Sodium lactate Е325
In the food industry, these antioxidants are actively used as a water absorbers, because the antioxidants are able not only to absorb moisture from alimentary products but to enhance the antioxidative action in them.
As a rule, the food antioxidant E325 sodium lactate is used at the production of bakery for dough acidification, which brings about the peculiar taste of the finished products.
Besides, this additive is known to be used in production of frozen meat stored in vacuum packing — the E325 considerably extends their shelf-life. The sodium lactate also occurs in the composition of dry cookies and uncultivated ham.
In the process of vegetable conservation, the addition of the food antioxidant contributes to making homogenous brine and enhancing the taste of the finished products which contain tomatoes, olives, onions and pickling cucumbers.
The sodium lactate E325 is actively used in production of confectionery creams, liqueurs and cocktails — not only extends it their shelf-life, but also improves the organoleptic properties of the finished products. In the production of caramel, marmalade and marshmallow, this additive contributes to viscosity decrease of the mass during the boiling. When added to the processed cheese slices, the sodium lactate E325 acts as a cheese-melting salt.
Sodium citrate Е 331
In the food industry, the food antioxidant E331 sodium citrate is added in the process of manufacturing beverages (especially the ones with the citrus taste), soufflé, jelly, marshmallow, marmalade, yoghurts, melted cheese, as well as dry milk and powdered baby milk. Besides, the sodium citrate itself is often used as a dressing. The sodium citrate Е331 is used for acidity regulation of certain dishes, e.g. gelatin desserts. It also serves for acidity regulation on coffee-machines.
